Before we talk about the best restaurant on Maui right now, Amasia, we need to talk about its chef, Alan Wong. The Tokyo-born, Hawaii-bred culinary artist served a tour at New York’s legendary eatery Lutece, then came back to Hawaii and opened a string of successful, much ballyhooed restaurants, including Canoe House on the Big Island. In the process, he’s won a James Beard award, cooked for President Obama, and become a celebrity in his own right.
Now, let’s talk about Amasia. First, the décor: The serene garden-like feel of the interior, complete with rocks imported from Mt. Fuji, transport you from the charming Grand Wailea, where the restaurant is located, and set the stage for a memorable sensory experience.
The menu is designed to trigger what Chef Wong “palate memory,” according to Maui Magazine. Dubbed “Master of Hawaii Regional Cuisine” by Bon Appetit, he treats patrons to a trip around the world, from China (Bao Buns) to Japan (Seven Nigiri and Spicy Ahi Roll, $40) to a range of desserts with a Hawaiian influence. (Try the divine Maui Gold “Pineapple Shave Ice” for $15.)
A word of warning: Although this is Maui’s best restaurant right now, the service can be spotty. Amasia’s seating policies are based on the number of servers that are available on a given evening. So, you may look around the restaurant and spot a number of empty tables, but be told that there’s no room for your party.
In addition, we’ve found that we’re often waiting for the first drink, which isn’t a good sign. When a server gets a drink in your hand, it signals that he or she will be prompt throughout your meal. With that in mind, here’s a tip: If there’s just two of you, sit at the bar, where your service will be immediate. Otherwise, be sure to make a reservation.
